Berry picking season is here and the kids and I are SO excited! The blackberry bushes are blooming and we can't ready to forage for some deliciously fresh Washington blackberries in the coming weeks. Yesterday we made a quick (and healthy) jam with some leftover Rainier Cherries we had. Super easy and the recipe can easily be adapted for other berries!
Recipe:
2 cups fresh berries (you can use any berry you wish (blueberries, cherries, blackberries, ect.)
2 tbsp raw honey
2 tbsp lemon juice (you can substitute other citrus juices too (orange, lime, ect.)
2 tbsp chia seeds
Steps:
Put blueberries in a pot, then add honey and lemon juice
Heat over medium/low heat until blueberries are soft and bubbling (5 minutes)
Lightly smash blueberries and reduce heat slightly
Add in chia seeds and mix to combine
Bring heat back to medium/low and let bubble (but not burn) until jam thickens (another 5 or so minutes)
Turn heat off and let cool for 5-10 minutes before transferring to jars
Store in fridge for up to 2 weeks
